I got a lousy little cup of crab bisque last weekend from the Soupman restaurant in Red Bank, NJ...and it cost me $9.85! I should have walked out, but I ate it. I was dismayed to discover that it wasn't much better than Bookbinder's crab bisque out of a can.
Avoid the Soupman restaurants unless you want average soup and high prices.
Son of a bisque!
Last week I threw together a bisque with the following:
1 can of campbells tomato soup.
1 can of whole milk.
1 large handful of shrimp, done in Old Bay, finely chopped.
1 handful of bay scallops.
1 pound of crab meat.
A bit of butter.
chopped green onions.
basil
pepper
Now, that was Mmm, Mmm, Good.
Oh man, bisque is all about the roux man, the roux!

Used to frequent the Princeton location and The LOBSTER bisque had about three lobsters in it.
